Did you have the feeling something was missing when you opened up your water bath canner for the first time and unpacked it?
Mine came with a manual, well, a little instructional sheet on how to clean it, and I read it cover to cover. Now I know how to clean my canner to keep it in good working order, but I felt like something was missing.

My name is Jennifer Osuch. I’m the author of the Preparedness Planner Series and I’m also one of the lead teachers at Seed To Pantry School, where my husband and I teach preserving, cooking and gardening skills.
I’ve been canning for over twenty years, but I still look up the processing time for everything I can. Every time! My family’s safety is too important not to be 100% sure of the processing time of what I’m canning. However, it’s frustrating to thumb through one of my cook books or try to find a reliable site online and easily look up the the times quickly.
Then for years I’ve struggled to figure out how many jars of a particular family favorite I need to ‘put-up’ every year. My sliced peaches always ran out toward the end of February. I considered it a winning year if I could get to the middle of March with a jar that got pushed to the back of the pantry.
This problem was compounded by the fact that I had 3 growing boys whose appetite seemed to grow exponentially from year to year. Then one year I decided to document how much they were eating before I canned peaches for the year. Then I canned enough to allow them to eat that much per week until I knew peaches would be back in season, plus 20% extra to compensate for growing. It seems like common sense now, but everything was new to me at the time and I was a little overwhelmed and excited to get going.
But really, why wasn’t this information in the manual? And that is the question I kept asking myself time and time again when I’d discover an easier way to do something.
